Crock Pot Bison Chili
4 lbs Ground
Bison
1 T Butter
1 T Crushed Garlic (in a jar)
1 C Fresh Chopped Celery
1 med. Sweet White Onion Chopped
4 Scallions Chopped
1 C Old
Westport chili spices (or 2
envelops of your favorite chili spice mix)
3 14oz Cans Crushed Tomatoes w/ Jalapeno Peppers
1 26oz Can Dark Red Kidney Beans
1 15oz Can Small Red Beans
In an extra large pot, sauté parsley & garlic in butter for two minutes with heat on high.
Add celery, onion, and bison. Stir and cook until bison is browned. Add spices and mix well.
Add tomatoes, beans and two cups of water. Heat to simmer. Pour into crock-pot, keep hot until
ready to serve. ENJOY!
Serve with oyster crackers, shredded cheddar cheese, sour cream, Tabasco, Red & green sauces, and jalapeno pepper slices.
