Today, health conscious Americans have a better choice ~ a red meat source that is high in protein, vitamins and minerals, and great tasting, yet is low in fat, cholesterol and calories. Buffalo meat is non allergenic, probably due to the fact that no growth hormones or antibiotics are used on these animals.
The "North American Buffalo" is making its way to the dinner plate of consumers.
We will refer to buffalo meat as both "buffalo" and "bison" throughout this site.

The benefits of bison meat lie in the basic nature and biological attributes of bison. Biologically, bison do not marble (put fat in the muscle). The result is more meat (protein) and less fat (calories) per pound. Research data on bison meat makes this animal even more impressive.
